yes, everything runs fine on Powerbooks and iBooks. You should bear in   
mind that most LCD displays are very dependent on viewing angle, which   
makes it difficult to achieve accurate control of contrast. You might   
consider using your laptop to drive a CRT. On Macs, the PsychToolbox   
fully supports using multiple displays.
