there are demos in the psychtoolbox that come quite close to what you ask
for. In MATLAB, typing
help psychdemos
will list all the demos. You should try
gratingdemo % presents a static gray tilted grating
qtdemo % presents a drifting gray grating
colorgratingdemo % presents a flickering red-green grating
all the techniques you need are demonstrated in these programs.
